I just saw this recipe for vegetable stalk and thought it would be great to freeze and have around for winter soups in the new year. Plus talk about healthy! 

I like to take my stalk, leftover tomato sauce or whatever else i have and ladle it into cupcake tins, freeze it into hockey pucks and store it in freezer bags. then i can use it in 1/2 cup increments as often as i need to.

Vegetable stalk

Makes 1 gallon

A flavorful vegetable stock subtly adds flavor to anything you make. Use herb stems, tomato trimmings, and vegetable stems and leaves in the stock. Celery root, kohlrabi, bell peppers, half a jalapeno, and any kind of fresh or dried mushrooms all work well. Don’t use starchy vegetables, like potatoes, which cloud the stock, and strong-flavored herbs like rosemary, sage, oregano, or tarragon should be avoided. For more nutritional value, save vegetable cooking water uncovered for several days (refrigerated) instead of discarding it, and use it as part of all of the liquid. Use organic vegetables wherever possible.

·        2 whole leeks

·        1 onion

·        2 stalks celery

·        4 carrots

·        1/2 turnip

·        1 bunch kale or collard greens

·        1 whole head garlic, cut in half around the middle

·        4 tomatoes, quartered, or 8 tomato cores

·        1/2 bunch parsley, washed

·        10 sprigs fresh thyme

·        2 bay leaves

·        10 black peppercorns

·        6 large dried shiitakes

·        1 gallon plus 1 quart water or reserved vegetable cooking water.

Wash and peel all the vegetables and cut roughly into 1-inch pieces. Place in a 3-gallon stockpot, add the water, and slowly bring to a simmer. Continue to simmer for 1 hour, or until the vegetables are very soft. Strain into a clean stockpot or bowl and discard the vegetables.

It is almost january 1 and I am already dreaming about my garden. i am plotting where the pumpkins and apples and figs and eggplants will grow best this time around and what the heck i am going to do with all that stupid grass that never looks very nice and has lots of brown spots were the doggies pee. sigh…i love dreaming about the perfect garden. AND this is the time of year that seed catalogs come out!

Now never once do they have a picture next to a seed and it is a mound of dirt or some shriveled thing that makes no sense…so i know there has to be hope! this will be my 8th year to try to grow Himalayan Blue Poppies…i just KNOW that one year i will get some.

in the meantime i heard this quote and thought it was perfect! Happy fantasies to all you winter dreamers out there. Oh and if you have a favorite seed catalog, please pass on the name. i spend hours drooling over dog eared pages of beautiful flowers and vegetables i must grow

This year, i stayed in Portland for Christmas. It ended up being a really wonderful Christmas and i made dozens of cookies, ate great food with people i love, watched Its a Wonderful Life on Christmas Day and today i made gingerbread houses with two of my favorite people; Mieke and Kaatje. We had a blast and i have royal icing on every surface in my house. That stuff is like cement! Growing up, my mom and i did so many crafts for all the holidays BUT we never made one gingerbread house! ever! I have always want to make one and this year i was determined.

i knew i would recruit Mieke but Kaatje joined us too! it was a huge fun mess.

Winter Bean Update Monday, December 22, 2008

i took these pictures today and last night. I LOVE this weather. i wish i had chains to get out of the house but at the same time, i have been in my cocoon for 3 days now and quite happy here, although someone to play cards with would be nice.

night1This is my favorite picture! last night the outdoors was lit up so brightly with everyone’s xmas lights and the street lights and my own tree was glowing inside.  Outside the window is my maple tree crusted with ice.

front This morning i woke up not having a clue that it had been snowing all night! I could not believe how gorgeous it was outside my front door and no ice on top, just powdery snow.

icypeas outside my back door the peas were collecting icicles. i am pretty sure i have lost a few plants this winter.

greenhouse here is the garden, all snuggled in for the winter, who knew it would be this snuggly? i have 18 inches of snow on my greenhouse roof and i didnt even attempt to dig my way inside.

coop2 I did however dig my way into the coop to see the girls. i got 2 eggs and the girls didnt even attempt to get out the door…they know they have a good thing going on in there.

oatmeal I brought them my leftover oatmeal and they were VERY HAPPY! usually if they see that door open they are outside in a flash! i kind of wish they had because the pictures would have been fantastic BUT their little tooters would have frozen off maybe.

So that is all I have for day 3 of WINTER STORM WATCH 2008! Hope you are enjoying the weather too.

3 years ago i went to Italy and had the very best time! it was my first trip to Europe, let alone across the world and i think it will always be closest to my heart. When i was in Florence I took a cooking class with Silvia. She met us at the market where I sampled 30 year old balsamic vinegar on sun warmed strawberries, watched old Italian men breakfast on tripe soaked baguettes with a glass of red wine and savored meats, cheeses and whole candied oranges from local venders. i have no words to describe how special that was for me. Then she brought us to her gorgeous flat where we cooked pork loin, roasted pepper souffles and made pasta stuffed with asparagus and ham while we drank a variety of wines from her pantry. I have never forgotten that day with her.

SO, just yesterday I got an email from her! i was so surprised to hear from Silvia. She sent me  merry christmas wishes AND a traditional recipe from her family for limoncello! i had to share it with you.

Silvia’s Limoncello

12 big lemons (thick skin and organic)

alcohol 95 proof 1 LT

sugar 1kg

water 1lt

Lemons should be perfect and show no stains and a thick skin

with a peeler zest lemon in thin strips (only yellow part, no white)

place lemon zest in a big jar and pour the alcohol on

seal jar and set aside for 15 days, shaking from time to time.

when done, prepare the sugar syrup; bring water to boil, pour the sugar and cook for 15 minutes, until completely disolved.

wait until the syrup is completely cool and then add it on the alcohol/zest mixture, otherwise your limoncello would look milky.

stir and let rest one day before you bottle it.

I cant wait to try it! i still have my bottle of limoncello from italy just because i dont want it to all be gone. i am still trying to get Silvia out to Portland for a cooking class. Stay tuned.

Snowy Solstice Sunday, December 21, 2008

Happy Winter Solstice! We made it over the hump and the days will be getting longer, albeit colder! Portland has welcomed winter in like i have never seen in my 18 years here. As I write this I am watch the snow/ice pellets pour out of the sky for the second consecutive day. Now i am not from NY or Wisconsin so this is all quite intriguing to me…in 2 days i may be blogging death threats to the winter snow gods but at this moment, i have nowhere to go and nothin to do.

I am however, watching as little WINTER STORM WATCH 2008 for, i kid you not, the 8th consecutive day, as possible. The media is so out of control with this weather, i am surprised THEY arent getting death threats. Whoever decided  to cancel The Grinch Who Stole Christmas (the original of course) on a cold snowy saturday night of xmas break to pound us to death with snow warnings should be flogged… oh well i digress.

On a happier note, my friends Anne and Nicole came over last night for meatloaf and kale and wine. it was so nice to see people and they ROCK for driving last night…of course one is from Chicago and one is from Boston so YEAH for people who love to drive in the snow! Today my neighbors brought me over fresh stickybuns that  Lori made this morning. They were the BEST sticky buns i have ever had and tasted like buttery cinnimon toast. And i just made a fresh batch of shortbreads, partly to stand in front of the warm oven and partly to smell them baking. (my NEW furnace isnt working).  I have almost finished an 800 page book that i have set aside because i dont want it to end and some movies i am excited to see but am tossed between watching them before the power goes out, or wait in case i am trapped in my house for a month. i guess with 6-8 more inches coming down tonight, i may have many days opportunity to get it all in :)

While all of this is happening I take camera in tow to capture the bits that makes me smile.

coopOf course i have been keenly aware of my feathered ladies outside. right now they have 8 inches of snow on their roof and 3 heat lamps to keep their water thawed and their bums warm. i am still getting eggs so they must be relatively happy, although i know they want to get outside.

Gladys came out to say hi on the first snow day and looks absolutley shocked dont you think? Now they  dont even try to come out of the coop as i am shoveling snow away from the door to bring them treats like leftover oatmeal, kale and bread crusts. They seem very grateful

While inside the bean, I have hunkered down. i am battling a bit of a cold and hot tea, fireplace, down comforter, good book and critters seems to be the perfect remedy.

The Niblets

I am soooo behind! I am not sure how i do this. When i have a million things going on, i tend to work well under the pressure. Now I am wide open and flying fancy free and i cant get a damn thing done…such is life i suppose.

Sorry i digress. Last week I had to work and got the on-call pager for Turkey day. Fortunately for me, i have fantastic friends who like to invite strays home for holidays feasts and they are great cooks too! My meal was spent in the company of more children then adults and lots of beautiful smiles and big appetites. Mike can make a mean turkey and Kaatje’s yams were something magical from Candy Land.

After dragging myself to work on Friday i drove up to Olympia for the weekend. I was exhausted and thank god the family let me curl up in my pajamas for the weekend and read and watch movies by the fire while they fed me and loved me. i did make it out of the house for about an hour to visit my favorite store in the world; Dree’s. My mom and i had a tradition to visit Dree’s every Christmas season to admire the beautiful displays. And I always get 1 ornament there… it is all i can afford! My favorite water glasses there are $49 each…and yes i have watched women register there for their weddings. I watched someone pick out the linens and the napkins were $24 each…they were gorgeous! she had impeccable taste. Would it be tacky to purchase the happy couple one water glass? i wonder if some people only invite rich relatives to the big event so they can afford their registry? hmmmm maybe this is why i only go there once a year, i have too many questions.

last week i got an email from the Walker Shortbread Company asking me for the recipe for my friend Jenna’s Apple Tart. I LOVE THIS TART! Jenna graciously complied and i wanted to share it with you too!

i hope you enjoy it and thanks Jenna!

Ingredients
1 box of Walkers Shortbread Cookies
1/3 cup flour
1/2 stick butter
a handful of pecans, toasted and chopped
1 tub (8oz) of mascarpone
1 egg
1/2 cup caramel sauce — divided
3 Pink Pearl apples (or any semi tart apples)
2 firm pears
3 tablespoons butter
2 teaspoons lemon juice

Directions
Crush shortbread cookies with rolling pin.
In a bowl, combine cookies, chopped pecans, flour, and butter
Take shortbread mixture and press it into a 9-in round tart pan.
Bake for about 10 minutes about 350.

In a bowl, beat mascarpone, egg, and about 1/4 cup of the caramel.
Spread in tart crust and bake 10 minutes at 350.
Chill several hours or overnight.

Right before serving, slice apples and pears
Melt butter in skillet and add apples and pears.
Cook until “done” but not mushy (maybe about 5 minutes or so
Add about 1/4 cup caramel and lemon juice.
Remove from heat.
Pour over chilled tart and serve.

This is sad and i have been so deliquent. I had such high hopes for my blogging in Decemeber and all i have done successfully is nap and read. i promise to be better… starting tomorrow! Right now i hear my jammies calling me to the couch for a little bad tv watching. I guess this week I am officially at rest :)
